Well Hello Dear Readers!  
I have returned to Iowa where it is HOT HOT HOT outside!  It is so hard with a toddler in this heat because he wants to be outside and he doesn't care that the heat has reached dangerous temperatures.  I managed to come up with some sort of a solution...I set up his little pool on the deck so that he can play in the water and I can sit in the air conditioned house and watch him through the sliding glass door.  He has been happy with that arrangement and so have I.  With it being so hot, it is really  unpleasant to cook, or even eat for that matter.  I did manage to make a fabulous pasta salad last night, which I will blog about in a separate post.  This post is for me to share with you the most awesome app I have found to date!  
Let me first say that nobody asked me to write this post, this is not an advertisement, this is just me sharing with you something that I find to be a very helpful tool in meal planning.  Pepperplate is a web based app, that you can also get for your iPad (which is how I found it) that helps you plan meals, menus, shopping lists, and store your favorite recipes.  It is a FREE app!  I have started using it religiously!
Here's how it works, you go to www.pepperplate.com  and register to make your own account.  From there, you can import recipes from supported websites, or manually enter your favorite recipes where they will be saved on your account.  You can then plug your recipes into the meal planner, which will in turn make you a grocery list.  You can adjust your grocery list, add and delete items as you need them, and then you can print out your list!  Your account automatically syncs with your other devices (iPad, iPhone) where you have the app.  I then am able to use my Pepperplate on my iPad to access my recipes instead of wasting paper by printing them out.  I just set up my iPad on the counter in my kitchen and follow the recipe from there!  
The grocery list is very useful because it automatically separates your items by "store aisle."  It also has a list of the recipes on the sidebar.  If you want, you can have your list separated by recipe instead of aisle.  
You do not need to have an iPad to use Pepperplate.  Because the app is web based, you can access it right from your computer.  I highly encourage you to try Pepperplate, especially if you are just getting started at meal planning!

Well HELLO from Seattle where the weather is absolutely PERFECT! I hope all of you are doing well!  I am having SUCH a nice vacation! 
Last Saturday I attended the WHO (Washington Homeschooler Organization) Convention and had the pleasure of meeting the author of a wonderful cookbook called "What's for Dinner?"  Jana Schofield has written, I believe, a very useful tool to helping busy families plan dinner and make time to sit together for a nightly meal.  I LOVE this cookbook and I cannot say enough good things about it!  The book provides 30 weeks (that's over 6 months) of weekly dinner menus and provides easy recipes as well as tips for planning ahead.  The best part?  There are NO REPEATS!  Love this book!  The recipes can and menus can easily be switched around to provide for even more variety in weekly menus!  Each menu includes a main dish, a vegetable and a dessert, so you could make as much of the menu or as little of it as you like!  In addition, it is really easy to substitute some ingredients for lower fat or whole grain options.
Since I am staying with my mom, she and I decided to pick a week and make the recipes for that week!  It was really easy to go through the recipes and find the ingredients we needed to get at the store, we did our shopping and then we made the recipes!  We chose to go with Week 15.  We opted to skip the desserts but made the main dishes.  Here's the menu:



  • Sunday- Chicken Cordon Bleu Casserole, Crunchy Green Beans, Pomegranate Cream Salad, Cherry Pie
  • Monday- Taco Soup, Pretzels, Peach Cobbler
  • Tuesday- Chicken Supreme, Paprika Whipped Potato, Broccoli Salad, Banana Pudding
  • Wednesday- Barbecued Beef on a Bun, Three Bean Salad, Caramel Chocolate Cake
  • Thursday- Salmon Patties, Potato Fans, Corn, Cabbage Carrot Slaw, Peanut Butter Blossoms
  • Friday- Leftovers, Go Out, or Try New Recipe
  • Saturday- Soft Tacos, Bean Dip, Picnic Cake
Now many of you know that I like to mess with recipes, but for the sake of reviewing I made the recipes exactly as printed by the author.  The only thing I did differently in the following recipe is that I used 12 grain crackers instead of saltines for the topping.  This was a very easy recipe that can be made ahead of time and frozen.

Chicken Cordon Bleu Casserole

  • 2 cups cooked rice ( I used brown rice)
  • 3 cups cooked chicken cut into pieces
  • 6 slices ham
  • 6 slices swiss cheese
  • 2 cans cream of chicken soup (I used homemade, there is a recipe in this cookbook for homemade cream of chicken)
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 10 saltine crackers, crushed
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic salt
  • 1/2 tsp. parsley
Spread rice in a 13X9 inch baking dish sprayed with cooking spray.  Arrange chicken over the top of rice.  Layer swiss cheese on top of chicken followed by a layer of ham cut into bite sized pieces.  Mix soup, milk and sour cream together and spread on top of ham.  Crush saltine crackers and add spices.  Sprinkle on top of soup mixture.  Bake at 350 for 30 minutes.

Ok, so Pampered Chef came out with this Chili Lime Rub that I just LOVE!  There is something about the flavor of chili powder and lime that just makes sense.  I have been making Chili Lime EVERYTHING lately!  Today I decided to make a slow cooker white chili featuring the flavors of chili and lime.  It was SO yummy!  Of course, if you don't have the PC Chili Lime Rub, you can always use equal parts of chili powder and lime zest.  Top this chili off with shredded jack cheese, crushed tortilla chips, sour cream, and a little lime juice to make it fancy!


Slow Cooker Chili Lime Chicken Soup

  • 2 lbs boneless, skinless chicken breasts, cut into bite sized pieces
  • 1 large onion, diced
  • 1 large green pepper, diced
  • 4 cups chicken stock
  • 2 (15 oz) cans Great Northern beans (or you could use pinto beans too)
  • 1 (6 oz) can diced green chilies
  • 1 tbsp. ground cumin
  • 1 tbsp. granulated garlic
  • 3 tbsp. PC Chili Lime Rub (or equal parts chili powder and lime zest)
  • 1/2 cup sour cream
  • juice of 1/2 lime (for a stronger lime flavor, use juice from a whole lime)
  • Grated jack cheese, extra sour cream, tortilla chips, and lime wedges for serving (if desired)
Place first 9 ingredients in the crock of your slow cooker.  Set for 8-9 hours on low setting.  During the last 30 minutes of cooking, stir the lime juice into the sour cream and add to the crock pot.  Set the slow cooker to high and heat through for last 30 minutes of cooking time.  Serve in a bowl with any of the topping options or your favorite soup topping!

Hello Everyone!


I am just SO excited.  SO EXCITED!  I haven't been so excited about something like this in a VERY long time.  Too excited to keep it to myself!  I want to share it with the WORLD!  Many of you probably saw my post on the travel club that David and I just joined.  That in and of itself is exciting, but over the weekend, they just revealed a NEW program and it is WAY AWESOME!  In fact, it is better than awesome, it is A-MAZING!  Truly!

Yoplait Smoothie GIVEAWAY

Recently I had the opportunity to try Yoplait Smoothies.  Yoplait Smoothies are made from frozen yogurt and come in four different flavors: Triple Berry, Strawberry Banana, Blueberry Pomegranate, and Strawberry Mango Pineapple.    We LOVE smoothies in our house and so I was excited to give this a try!  
Daniel and I tried the Triple Berry flavor.  Each packet makes two smoothies.  It was very easy, we just dumped the contents of the packet into the blender, added a little milk and voila!  I was pleasantly surprised at how yummy it was!  Daniel LOVED it and was asking for "Mo, Mo Mootie" (more, more smoothie).  In addition, I was very impressed that the Yoplait smoothies do not contain any ingredients from my "Yucky No-No" list.

I know, I know...it has been FOREVER since I last posted a recipe!  For that I am SO sorry!  Sometimes life gets in the way of blogging.  David and I have been really busy.  David's been working CRAZY hours.  I have been teaching water aerobics twice a week, doing my Pampered Chef thing, and chasing around a two year old.  Between the two of us we have barely had any time to spend together.  Actually, David and I used to travel a whole heck of a lot before having Daniel.  We were talking about how nice it would be to take a vacation, but how expensive taking a vacation is with kids. This recipe is SUPER easy, and perfect for my busy life at the moment.  If you can open a can and dump, you can make this "chili."  The best part?  It cooks right in your slow cooker so that you can relax, or do what you need to get done!


Hands Off Slow Cooker "Chili" Soup


  • 1 lb. ground turkey or beef
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 4 cloves garlic, minced
  • 1 cup salsa
  • 1 (15 oz) can black beans
  • 1 (15 oz) can pinto beans
  • 2 (6 oz) cans diced green chilies
  • 1 (15 oz) can diced tomatoes
  • 1 (6 oz.) tomato paste
  • 1/2 tsp. each cayenne pepper, chili powder, cumin
  • chips, sour cream, shredded cheese for topping
Toss everything in the crock of your slow cooker (except the chips, sour cream and cheese of course).  Set the slow cooker for 6-8 hours on low.  Serve hot topped with chips, sour cream, and shredded cheese if desired.  YUM!

The Best Popcorn EVER!!!

I LOVE popcorn!  But I am very particular.  I won't eat movie popcorn, for example, and I will rarely eat the microwave variety.  Popcorn can be a very healthy treat, if  you air pop it and don't add much butter.  I like to experiment with different flavors of popcorn, cheesy popcorn, garlic popcorn, chocolate caramel corn, etc.  A couple of weeks ago I was asked to do a Pampered Chef party for my friend.  I made this popcorn and it was an instant hit.  The idea came to me because I was craving popcorn while I was trying to brainstorm some ideas of easy snack foods for entertaining for the holidays.  I made this for another Pampered Chef show last night and again, it was a total hit!  The secret ingredient?  The Pampered Chef Oil Dipping seasonings, but you could use any type of seasoning you have on hand.  Pampered Chef has four varieties - sundried tomato, parmesan garlic, lemon herb, and spinach and red pepper.  They cost $6.50 and they all work really great for this popcorn.  If you are craving some popcorn tonight and don't want to wait, you can use any variety of salt free mixed herbs and spices.  No need for salt here, the flavor of this popcorn is FANTASTIC!  This recipe couldn't be easier!


The Best Popcorn EVER!
Note- the instructions for this recipe are for popping the popcorn on the stove.  You can also air pop your popcorn, just omit the instructions for cooking the popcorn.

  • 1/2 cup un-popped popcorn kernels
  • 4 tbsp. butter 
  • 1 tbsp. Pampered Chef oil dipping seasoning of your choice or other salt free seasoning mix
  • 1 tbsp. parmesan cheese 
  • 1 tbsp. vegetable oil
In a medium sized saucepan with a lid, heat the oil over medium heat.  Add two or three popcorn kernels and cover.  When those kernels have popped, add the rest of the popcorn and cover.  Allow popcorn to pop, shaking the pan back and forth to prevent burning until the popping slows to about 15 seconds between pops and a majority of the popcorn is popped.  Remove the popcorn to a very large bowl.  Place the butter and seasoning in a microwaveable bowl.  MIcrowave on high for 30 seconds or until melted.  Add the parmesan cheese, stir to make sure it is well combined.  Pour over the popcorn and use your hands (or a large spoon) to mix until the popcorn is well coated with the butter mixture.  Enjoy!
