Slow Cooker BBQ Pork Burritos

Today it was SO hot and humid outside, I really did not want to cook.  I decided use the slow cooker so that I was not slaving over a hot stove in the crazy humidity.  Even though I had the air conditioning on full blast, it was still MASSIVELY hot! 
I had some boneless pork loin chops, so I decided to make pork burritos and they turned out SO yummy!

Slow Cooker BBQ Pork Burritos


  • 1-2 lbs bonelesspork loin chops, or any cut of pork you have on hand

  • 1 onion, chopped

  • 1 cup barbecue sauce

  • 1 cup salsa

  • 1 cup pureed squash or sweet potato

  • 1 can chopped green chilies

  • 1 tsp. ground cumin

  • 1/8 tsp. chipotle chili powder (or regular chili powder)

  • 1 tsp. garlic powder

  • 1/2 tsp. paprika

  • 2 cups cooked brown rice

  • 1 can refried black beans

  • 2 cups shredded cheese (if desired, I used a cheddar jack blend)

  • 4-8 large flour tortillas

  • sour cream, if desired
Place the onion and the pork in the slow cooker.  Combine the next 8 ingredients and pour over the pork and onions.  Set the slow cooker to cook on high for 4 hours or low for 6 hours.  Shred the pork with two forks in the sauce.  Heat the black beans in the microwave for 1 and a half minutes until soft.  Heat the tortillas in the microwave for 30 seconds between two damp paper towels.  Fill the tortillas with pork mix, brown rice, black beans, cheese and sour cream (if desired), fold in sides and roll up the burrito.  Enjoy!  So yummy!

I have been looking for a blog like this! I am a terrible cook. However, I LOVE my slow cooker. You know, I never think to use it in the summer so I am glad you posted this recipe. I am going to break out the cooker and try this one. It will give me a break from the BBQ!

oh my, those looks so good!!! I have never made pork burritos, and I don't know why, it would have to make such a wonderfully tasty moist burrito! The pureed squash is an interesting addition...

Welcome Chef Dennis! Thanks for visiting! The squash is actually a hidden ingredient. You wouldn't know it was there unless I told you, but it lends a nice texture and a little extra nutrition.
