Chicken Soup with Acini de Pepe
- 4 boneless, skinless chicken breasts
- 6 cups chicken stock or broth
- 1 cup chopped carrots
- 1 onion, diced
- 4 cloves garlic, minced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 1/2 cup uncooked acini de pepe or other small pasta
- 1 lb bag baby spinach
- 2 tbsp. dried Italian herbs
- salt and pepper to taste
- 1 tbsp. olive oil
