Baked Tacos

WE LOVE TACOS.  We have them practically every week.  Here's an idea I found on Pinterest.  YUM!

Baked Tacos

  • 1 lb ground turkey (or you can use ground beef, we just happen to prefer ground turkey for tacos)
  • 1/2 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, minced
  • 1 can diced green chilies
  • 1 can refried black beans
  • 8 oz taco sauce ( I like the Frontera brand but you can use any brand, or you can use salsa)
  • 1 cup grated cheese (I like pepperjack and cheddar)
  • small soft tortillas (you can use flour or corn, but I like flour)
  • shredded lettuce, sour cream, olives, and salsa for topping
Preheat oven to 375 degrees.  In a large deep sided skillet, cook the turkey, onion, green pepper, and garlic until turkey is cooked through (if you use beef, be sure to drain).  Add the sauce, black beans, and green chilies and cook another 2-3 minutes or until heated through.  Spoon the meat mixture into the tortillas, and then stand up in a baking dish.  Top with cheese.  Bake 10 minutes or until cheese is melted.  Top with your favorite taco toppings (such as lettuce, sour cream, olives, and salsa).

Enjoy!
