Leftover Pork Soup

Sunday is Soup Night in the Porter House!  I threw this soup together using some leftover pork tenderloin roast I had.  You could certainly use chicken, or I think Italian sausage would be really yummy too!  

Leftover Pork Soup


  • 1 lb leftover pork roast
  • 1 tsp olive oil
  • 2 large carrots, chopped
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 red pepper, chopped
  • 2 (15 oz) cans diced tomatoes
  • 2 (15 oz) cans cannellini beans
  • 4 cups chicken stock
  • 1/2 cup small pasta - I like acini de pepe, but that can be hard to find sometimes so you can use orzo or ditalini or any other small pasta you like
  • salt, pepper, and italian seasoning to taste
  • 8 oz. fresh spinach
Add the carrots, onion, green pepper, red pepper, garlic, salt, pepper, italian seasoning and olive oil in a large soup pot and saute until the onions are soft.  Add the pork, tomatoes, chicken stock, and beans.  Simmer for about 15 minutes or until carrots are soft.  Add the acini de pepe and continue to simmer until cooked through.  Add the spinach and stir in until wilted.  Serve with a sprinkling of freshly grated parmesan if desired.  Yummy!
