Chicken Soup with Acini de Pepe
Here's a super easy and delicious soup that can be whipped up in no time! I got this recipe from my mom, and it is so delicious served up with a sprinkling of parmesan cheese and some crusty bread! Yum!
Chicken Soup with Acini de Pepe
4 boneless, skinless chicken breasts
6 cups chicken stock or broth
1 cup chopped carrots
1 onion, diced
4 cloves garlic, minced
2 celery stalks, diced
1 can diced tomatoes
1/2 cup uncooked acini de pepe or other small pasta
1 lb bag baby spinach
2 tbsp. dried Italian herbs
salt and pepper to taste
1 tbsp. olive oil
In a large soup pot or dutch oven, heat the olive oil over medium high heat. Saute the onion, garlic, carrots, and the celery about 5 minutes or until onions are translucent. Add the chicken and saute another 2-3 minutes. Add the stock, the herbs, and the tomatoes. Bring to a boil, turn down heat to medium low and simmer 20 minutes or until the chicken is cooked through. Add the acini de pepe and cook another 7-10 minutes or until al dente. Finally, add the spinach and simmer in the soup until just wilted. Serve with a sprinkling of delicious Parmesan cheese!
