Insanely Yummy Orange Chicken

And I mean it, this chicken is absolutely mouth watering!  I must admit though, I am feeling a little lame tonight because I totally forgot to take a picture of this chicken dish.  It is one of my favorites and every time I make it Daniel does what I call his "yummy wiggle" and eats it all up, then licks his fingers!  I can't believe I didn't take a picture of it for this post!  I debated not posting it, seeing as I don't have a picture, but then again I figured I would post the recipe anyway, hoping you could use your imagination on the image.  Oh well, to tell you the truth, I have been lame pretty much all day.  My brain has not been functioning properly at all today so please forgive me.

Insanely Yummy Orange Chicken
  • 4 boneless skinless chicken breasts (you could also use chicken thighs)
  • 1/4 cup soy sauce
  • 1 cup orange juice
  • 1 can mandarins in juice or light syrup (make sure they do not contain HFCS)
  • 1 envelope dry onion soup mix (I use HyVee brand, it doesn't have anything bad in it)
  • 1/4 cup packed brown sugar
  • 1 tsp. granulated garlic or garlic powder
Place the chicken in a ziplock bag.  In a bowl, whisk the rest of the ingredients together.  Pour over the chicken and marinate in the refrigerator 2-8 hours.  Preheat your oven to 350 degrees and spray a 13X9 inch baking dish with cooking spray.  Pour the contents of the ziplock (chicken and ALL of the marinade).  Bake in the oven for one hour or until chicken is cooked all the way through.  Turn the chicken several times during baking to make sure it is evenly coated with the sauce.  Serve over rice with extra sauce.  Yum!

  4. I either take pictures of everything I eat and every step of what I cook, even when I don't end up using them; or I forget to take a picture of something that was fabulous ... there's never any sensible moderation! But the chicken sounds great even without the photo ... :)
