Tacos
- 1 lb ground meat (I use ground turkey)
- 1 can diced green chilies
- 1 can black beans, drained
- 1 cup salsa
- 1 cup pureed sweet potato (or squash, or cauliflower, or spinach)
- 1 tbsp. granulated garlic or garlic powder
- 1 pkg. taco seasoning
- 1 tbsp. vegetable or olive oil
In a large skillet with deep sides heat the oil. Add the meat, the taco seasoning and the garlic powder and cook until the meat is browned about 5 minutes. Add the green chilies, the salsa, the sweet potato, and the black beans and cook another 2-3 minutes. Serve in tortillas or taco shells, with your favorite toppings, like shredded cheese, sliced olives, sour cream, salsa, guacamole, shredded lettuce, whatever you like!

By the way, I always love the pictures of Daniel. What a cutie. And how generous of him to be your regular model.
Thanks Amy! I have to show him enjoying his food =)!
