This is one of my favorite chicken recipes. I have no idea where I got it, but it's so easy, it has probably been around forever. This chicken is especially good because I can make it once and use it twice. Whenever I make it, I chop it up and use it in a salad the next day, it is as good cold as it is hot. Tonight I served it with "buttered" noodles and peas and carrots, however brown rice also makes a nice accompaniment.
Simple Baked Honey Mustard Chicken
- 2 large boneless, skinless chicken breasts cut in half, or four small chicken breasts.
- 1/4 cup dijon mustard
- 1/8 cup honey
- 5 slices bacon, cooked and crumbled (I use turkey bacon and cook it in the microwave for 1 minute per slice)
- 4 slices pepper jack cheese (or mozzarella, or provolone, or whatever you like...you can also use shredded cheese)
Preheat oven to 375 degrees and spray a baking dish generously with cooking spray.
In a bowl, mix the honey and the mustard until well combined.
Coat the chicken in the honey mustard. Bake in the oven for 45-50 minutes or until the chicken is no longer pink in the middle.
Sprinkle the bacon evenly over each piece of chicken and then top with the cheese. Allow to bake another 10-15 minutes or until cheese is melted and bubbly. YUMMY!
"Buttered" Noodles
I have the word "buttered" in quotation marks because these aren't your typical buttered noodles...of course I have added a little something extra in there - pureed cauliflower! The cauliflower not only adds some extra veggies to your meal, it also gives the noodles a creamy texture . These are so yummy, you won't even know the sauce is cauliflower!
- 1/2 package noodles (any kind you like, I of course, use Wacky Mac a lot lately)
- 1/2 cup cauliflower puree
- 1 tbsp. butter
Cook the noodles according to package directions and drain. Return to the pan and over low heat, stir in the butter until melted, then add the cauliflower until heated through. You can turn this into mac and cheese by adding some of your favorite cheese to the mix! Easy peasy!
