Honey Lime Pork Stir Fry
- 4 boneless pork loin chops, cut in strips
- 1 green pepper, cut in strips
- 1 red pepper, cut in strips
- 1 pkg. sugar snap peas, fresh or frozen (8 oz)
- 1 head of broccoli cut into florettes or you can also use frozen broccoli florettes
- 1 onion, sliced
- 2 scallions, sliced
- 2 cloves garlic, minced
- salt and pepper to taste
- 16 oz Asian noodles (I use the fresh soba or udon noodles but you can also use dry noodles)
- 3 tbsp. dijon mustard
- juice of one lime
- 1 tsp. rice vinegar
- 2 tsp fresh ginger, micro-planed
- 1 tbsp. sesame oil
- 1 tbsp. honey
- 3 tbsp. soy sauce
- 1 tsp. garlic powder or 2 cloves garlic minced
- 3 tbsp vegetable oil
You can use any veggies you have on hand and if you are not fan of pork you can certainly use chicken for this recipe. Also, you can make this vegetarian by replacing the pork with tofu or using just vegetables!
