I LOVE Asian noodle dishes. Here is a honey lime pork stir fry that is really yummy!

Honey Lime Pork Stir Fry

  • 4 boneless pork loin chops, cut in strips
  • 1 green pepper, cut in strips
  • 1 red pepper, cut in strips
  • 1 pkg. sugar snap peas, fresh or frozen (8 oz)
  • 1 head of broccoli cut into florettes or you can also use frozen broccoli florettes
  • 1 onion, sliced
  • 2 scallions, sliced
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 16 oz Asian noodles (I use the fresh soba or udon noodles but you can also use dry noodles)
  • 3 tbsp. dijon mustard
  • juice of one lime
  • 1 tsp. rice vinegar
  • 2 tsp fresh ginger, micro-planed
  • 1 tbsp. sesame oil
  • 1 tbsp. honey
  • 3 tbsp. soy sauce
  • 1 tsp. garlic powder or 2 cloves garlic minced
  • 3 tbsp vegetable oil
If using dry noodles, cook them according to package. If using fresh noodles you can add them directly to the skillet at the end. Sprinkle pork with salt and pepper. In a wok or large skillet with deep sides, cook the pork with the garlic in the vegetable oil until the pork is no longer pink. While the pork is cooking, prepare the sauce. In a small bowl, whisk together dijon, lime juice, rice vinegar, fresh ginger, sesame oil, honey and soy sauce, and garlic powder. Remove pork to a plate and cover with foil to keep warm. Add all the veggies to the skillet and saute until tender crisp. Add the pork and the noodles to the skillet and mix together. Add the sauce and toss to mix, cook about a minute more until heated through. Garnish with toasted sesame seeds if desired.

You can use any veggies you have on hand and if you are not fan of pork you can certainly use chicken for this recipe. Also, you can make this vegetarian by replacing the pork with tofu or using just vegetables!
