Slow Cooker Chicken Tortilla Soup
- 2 cups cooked chicken (like from a leftover rotisserie chicken or roasted chicken)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (32 oz.) can refried beans
- 1 (15 oz.) can black beans
- 1 (15 oz. ) can pinto beans
- 1 (16 oz.) jar salsa
- 2 (6 oz.) cans diced green chilies
- 6 cups chicken stock
- 1 cup fresh or frozen corn kernels
- Sour cream, tortilla chips, shredded cheddar and/or jack cheese, chopped green onions for serving
Put all the ingredients in the crock of your slow cooker. Set slow cooker to low heat and cook for 4-6 hours. Serve in a bowl with a generous helping of crushed tortilla chips, sour cream, cheese and green onions!
