My Favorite Chicken Tortilla Soup Recipe

Here is yet another recipe that I got from my mom.  We have been making this soup in our family for years.  Most of the time I make it in the slow cooker, although sometimes  I do it up on the stove.  It is so easy and totally budget friendly!  If you can open a can and dump, then you can make this soup!



Slow Cooker Chicken Tortilla Soup
  • 2 cups cooked chicken (like from a leftover rotisserie chicken or roasted chicken)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (32 oz.) can refried beans
  • 1 (15 oz.) can black beans
  • 1 (15 oz. ) can pinto beans
  • 1 (16 oz.) jar salsa
  • 2 (6 oz.) cans diced green chilies
  • 6 cups chicken stock
  • 1 cup fresh or frozen corn kernels
  • Sour cream, tortilla chips, shredded cheddar and/or jack cheese, chopped green onions for serving
Put all the ingredients in the crock of your slow cooker.  Set slow cooker to low heat and cook for 4-6 hours.  Serve in a bowl with a generous helping  of crushed tortilla chips, sour cream, cheese and green onions!
