Salmon Risotto

Risotto is a really easy dinner that is usually a crowd pleaser.  I change my risotto up many different ways, but I think my salmon risotto has to be my favorite.  

Salmon Risotto
  • 1 lb salmon fillet, cooked and flaked (or you can also use canned salmon if you want)
  • 1 recipe lemon dill risotto
  • 1/4 cup peas
Cook the risotto according to the recipe provided in the link.  In the last 5 minutes of cooking, add the peas and the salmon.  Serve with extra parmesan if desired.
