Crispy Baked Ranch Chicken

This chicken recipe is SUPER delicious and SO easy!  It's very popular with my family and I make it often.  Tonight I served it with oven roasted potatoes and steamed broccoli but it would also be quite delicious with  mashed potatoes, or even a green salad!  Daniel and David like to dip this chicken in barbecue sauce!

Crispy Baked Ranch Chicken

  • 4 boneless skinless chicken breasts cut into strips or 1 lb chicken breast tenders

  • 2 cups ranch dressing (if I don't make my own I use Newman's Own or Marie's Peppercorn Ranch)

  • 2 cups italian seasoned bread crumbs (I make my own from day old bread, italian seasoning, garlic powder, onion powder, and a little parmesan cheese and store it in the freezer)

  • 2 tbsp melted butter (optional)
Preheat oven to 400 degrees and spray a cookie sheet generously with cooking spray.  Place the ranch dressing in one shallow dish and bread crumbs in another.  Dip the chicken in the ranch dressing and turn to coat then dip the chicken in the bread crumbs and turn to coat.  Place coated chicken on the cookie sheet.  If you are using the butter, drizzle it over the chicken (this will help it crisp up in the oven, but it is not required).  Bake 30-35 minutes or until chicken is no longer pink in the middle.

Thanks so much! It really is yummy. Sometimes I mix in a little pureed cauliflower with the ranch dressing for a little something extra.
