Hi! I'm Elizabeth! I am married and I have two sons. My older son has high functioning Autism. I lived in France and speak fluent French. I love to travel, especially to Paris. I also love cooking and write The Foodie Mommie Blog.
We LOVE tacos and eat them often. Here is my classic taco recipe that can be thrown together in about ten minutes. Tonight we had soft tacos because I had soft tortillas on hand, but sometimes we serve this filling in crunchy tacos. Top with your favorite taco toppings!
1 lb ground meat (I use ground turkey)
1 can diced green chilies
1 can black beans, drained
1 cup salsa
1 cup pureed sweet potato (or squash, or cauliflower, or spinach)
1 tbsp. granulated garlic or garlic powder
1 pkg. taco seasoning
1 tbsp. vegetable or olive oil
In a large skillet with deep sides heat the oil. Add the meat, the taco seasoning and the garlic powder and cook until the meat is browned about 5 minutes. Add the green chilies, the salsa, the sweet potato, and the black beans and cook another 2-3 minutes. Serve in tortillas or taco shells, with your favorite toppings, like shredded cheese, sliced olives, sour cream, salsa, guacamole, shredded lettuce, whatever you like!
