We LOVE tacos and eat them often. Here is my classic taco recipe that can be thrown together in about ten minutes. Tonight we had soft tacos because I had soft tortillas on hand, but sometimes we serve this filling in crunchy tacos. Top with your favorite taco toppings!

Tacos
  • 1 lb ground meat (I use ground turkey)
  • 1 can diced green chilies
  • 1 can black beans, drained
  • 1 cup salsa
  • 1 cup pureed sweet potato (or squash, or cauliflower, or spinach)
  • 1 tbsp. granulated garlic or garlic powder
  • 1 pkg. taco seasoning
  • 1 tbsp. vegetable or olive oil
In a large skillet with deep sides heat the oil. Add the meat, the taco seasoning and the garlic powder and cook until the meat is browned about 5 minutes. Add the green chilies, the salsa, the sweet potato, and the black beans and cook another 2-3 minutes. Serve in tortillas or taco shells, with your favorite toppings, like shredded cheese, sliced olives, sour cream, salsa, guacamole, shredded lettuce, whatever you like!
