Cheesy Chili Twice Baked Potatoes

My family loves twice baked potatoes.  I make them many different ways - with ham and cheese, broccoli and chicken, and Daniel's personal favorite- Chili Cheese!  This is a really simple recipe that will have your kids saying "more please!"


Cheesy Chili Twice Baked Potatoes

  • 2 large russet potatoes, baked and cooled slightly (enough to handle)
  • 1 cup grated cheddar jack cheese blend, divided
  • 1/2 cup sour cream + more for garnish if desired
  • 1 lb ground turkey
  • 1 medium onion, diced
  • 1 can diced green chilies
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 cup pureed squash
  • 1/2 tsp. ground cumin
  • 1/4 tsp. chipotle chili powder (careful, this stuff is HOT so a little goes a long way- you can also use regular chili powder if that is what you have on hand).
  • 1 tbsp. garlic powder
  • 1/2 tsp. paprika
  • 3 tbsp. olive oil

In a large skillet with deep sides, heat olive oil and add the onion.  Saute onion about 3 minutes or until starting to soften.  Add the ground turkey and cook, breaking up with a spoon, until no longer pink.  Add the green chilies through the squash, mix together, cover and let simmer for 20-30 minutes, stirring occasionally.  Meanwhile, preheat the oven to 400 degrees.  














Cut the potatoes in half lengthwise and gently scrape out the middle into a bowl, being careful not to break the skins.  Place the potato shells on a greased cookie sheet.  




















Mix the potato flesh with the sour cream and half of the cheese.










  












Fill the shells with the potato mixture.  


























Spoon chili mixture over the potatoes and top with the rest of the cheese.  
























Bake for 5-10 minutes or until cheese is melted.  
























Serve with a dollop of sour cream.  So yummy!
























On another note, I wanted to share a cute snack idea with you.  Daniel loves bananas and I was feeling creative today, so I decided to make him a snack critter.  I did this using half of a banana for the body, I covered it in peanut butter.  Then I used chocolate chips for the eyes and nose, cheerios for the ears, and cheese for the whiskers and tail.  I set it on top of a bed of grapes.  He LOVED it and laughed when I brought it to him at the table!

Oh I love that snack critter! I'm going to have to do something like that. I feel like I'm always saying "Don't play with your food."
