Beef and Tomato Linguini
- 1 pkg. pasta (I used linguini, you can use whatever you want)
- 1 tbsp. olive oil
- 1 large sweet bell pepper cut into strips
- 1 onion, chopped
- 1 lb beef (I used bottom round cause that is what I had on hand but you could use flank steak or tenderloin, or whatever)
- 1 can diced tomatoes
- 3 garlic cloves, minced
- 1 tbsp. italian seasoning
- salt and pepper to taste
Cook pasta according to package directions, drain, and set aside. In a large skillet with deep sides, heat the oil over medium high heat. Add the steak, garlic, salt and pepper, and cook about 3 minutes or until starting to brown. Add the peppers and the onion and continue to cook, stirring occasionally until the vegetables are starting to soften. Add the tomatoes and the italian seasoning. Stir and cover. Turn heat down to medium low and let simmer for 5-7 minutes or until beef is cooked through. Add the cooked pasta to the skillet and stir to coat with the beef mixture. Top with parmesan cheese, if desired.

Maybe I missed it, but why did you decide to go dairy free? And is this a long-term thing, or just for a short while? Is it for the whole family or just Daniel?
Cheri- We decided to go dairy free because we suspect Daniel might be high functioning Autistic (Aspergers) and we were told that it might help him to go off dairy. We are only doing it for a couple of days to see if it helps and so far we really aren't seeing any differences. I decided to let him have some milk today because he was asking for it and whining and really wanting it. I think we are just going to cut down the dairy instead of removing it from his diet altogether.
Oh and it is just for him, not for the whole family.
Oh wow, I had no idea. You know, Doug and I have talked about it and we think Miles is mildly autistic. Just some things he does...but when I have talked to other parents, they said their sons did the same thing at that age (would hit themselves in the head, couldn't form sentences or for that matter, even pronunciate words). How long are you going to give it before you decide that it's not the dairy? I would like you to let me know if it helps. I have noticed Miles does things a lot better around other kids but at home he just seems to forget everything lol.
